Makes 4-4.5 dozen cookies using a 3" round cutter | |||
* 3/4 cup unsalted butter (1 1/2 sticks), room temperature | |||
* 1 cup sugar (granulated or brown) | |||
* 1 egg | |||
* 1/4 cup orange juice | |||
* 1 1/2 tsp vanilla | |||
* 3 cups flour | |||
* 1 tsp baking soda | |||
* 1/2 tsp salt | |||
Cream together butter and sugar. Add egg and beat well. Stir in orange juice and vanilla, and blend. Add dry ingredients together and blend into the mix. Chill for 1 hour or more. | |||
Preheat the oven to 375 F. | |||
Roll out the dough, cutting cookies with a 3" round cutter. Fill with a scant teaspoon of filling, and pinch into shape. Bake at 375 F for 15 minutes. | |||
